Salmon-Shrimp Potato Salad
1 1/4 pounds Gold Potatoes, scrubbed
2 ounces smoked salmon, cut into thin strips
1/2 pound cooked shelled shrimp
1 cup seedless white grapes, halved
1/2 cup pecan nuts
1 tbsp. snipped fresh chives
1 tbsp. chopped fresh dill, for garnish
1. 3/4 cup of your favorite vinaigrette or Italian dressing
2. Cook potatoes in lightly salted water 15-20 min. until tender.
3. Drain well. When cool, slice potatoes into a salad bowl.
4. Add smoked salmon, shrimp, grapes, pecans and snipped chives. Mix the salad
lightly, using two forks.
5. Pour the dressing over the salad.
6. Toss lightly to coat, sprinkle with dill and serve.
