Smoked Salmon Potato Salad
12 small red potatoes
1/2 cup smoked salmon
1/4 cup sour cream
1/4 cup red onion, diced
1 Tbsps capers
2 Tbsps horseradish, prepared
2 Tbsps olive oil
1 tsp dill, dried
Quarter red potatoes, place them into a bowl with 2T of olive oil. Mix
thoroughly so potatoes are coated with olive oil. Place potatoes in a pan and
put into a hot oven (400 F) for 20-30 minutes, or until just tender. (For an
extra taste treat, place potatoes directly on a barbeque grill until tender.)
Put potatoes aside to cool.
Mix salmon, sour cream, horseradish, capers, onions into a bowl. Break up
potatoes to smaller pieces, add smoked salmon mix, add salt and pepper to taste,
and mix well. Sprinkle with dill and serve.
