Sweet Potato Salad
Ingredients:
3 lb. cooked sweet potatoes, peeled and cubed
1/2 cup finely chopped onion
1 cup chopped green pepper
2 cup chopped celery
1 1/2 cup mayonnaise
1 1/2 tsp. salt
1/4 tsp. black pepper
few dashes Tabasco sauce
Method:
In large bowl, mix all ingredients. Cover and refrigerate at least 1 hour.
Makes 2 quarts.
