Apricot Vinaigrette  
 

Ingredients:
1/3 cup vegetable oil
2 tbl white wine vinegar
2 tbl orange juice
2 tbl apricot jam
1/2 tsp salt
1/2 tsp ground coriander
1/2 tsp freshly-ground black pepper

 

Directions:
Whisk together all ingredients in a small bowl. This recipe yields 1/2 cup.
