Caesar Salad Dressing Recipe


Caesar Salad Dressing            


The traditional way to make Caesar Salad, is to dress the greens with each ingredient, tossing in each item, one-by-one. This dressing can be made ahead and salad can be dressed all at once.

Ingredients:
3 anchovy fillets, drained
1 large garlic clove
1/3 cup, freshly grated Parmesan cheese
1 cup, mayonnaise
3 tablespoons, red wine vinegar
3 tablespoons, fresh lemon juice
1/2 cup, Dijon mustard
1/4 teaspoon, fresh ground black pepper
1 1/2 teaspoons, Worcestershire sauce
1/3 cup, vegetable oil
1 1/2 tablespoons, flavorful olive oil
 

Directions:
In a blender or food processor, puree anchovies, garlic and Parmesan cheese. Add mayonnaise, vinegar, lemon juice, mustard, pepper, Worcestershire sauce and oils, and blend until smooth.
Dressing will keep (covered and refrigerated) for up to 2 weeks.

Makes 2½ Cups
