Red Wine & Mustard Vinaigrette
Ingredients:
1 1/2 tablespoon of Dijon-style mustard
1/3 cup of red wine vinegar
1/3 cup of olive oil
1 tablespoon of chopped Italian parsley
Freshly ground black pepper
Directions:
Whisk mustard and vinegar in a small bowl. A add oil slowly, whisking constantly
until vinaigrette thickens. Stir in parsley and pepper. Yield: 1 scant cup.
