Barbecue Beef Sandwiches
From Southern Living
1 bacon slice, cut into 1-inch pieces
1 medium onion, chopped
1/2 cup ketchup
1/2 cup apple juice
1 tablespoon white vinegar
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
3 tablespoons sugar
12 ounces cooked roast beef, thinly sliced
4 kaiser rolls, split
Cook bacon in a medium saucepan over medium-high heat 3 to 4 minutes; add onion,
and sauté 3 to 5 minutes or until bacon is crisp and onion is tender. Stir in
ketchup and next 6 ingredients; bring mixture to a boil. Cover, reduce heat, and
simmer, stirring occasionally, 15 to 20 minutes. Stir in sugar and sliced beef.
Serve warm on kaiser rolls.
Yield: 4 servings
