Rosemary Chicken Panino Recipe
 


Rosemary Chicken Panino             
 

Ingredients:
˝ Loaf of Rosemary Olive Bread ( Sarah Lee Makes this ) Also ( San Luis Sourdough )
1 Gaelic Clove
3 Chicken Breasts Boneless
1 Rosemary Spring
Salt and Pepper
Peperonatta
1 Red Bell Pepper Julianed
2 Yellow Bell Pepper Julianed
1 Small Onion, Sliced
1 Garlic Clove Crushed
1 Tbsp Capers
Olive Oil

Directions:
Season the chicken with salt and pepper. Over medium heat, cook chicken halfway submerge in chicken broth with the spring of rosemary. Cook cover for 15-20 minutes. Let cool in the pan. In a large sauté pan over high heat, drizzle some olive oil and sauté onions and crushed garlic. When onions are tender add peppers and sauté for 5 more minutes. Add capers, season and let simmer until peppers softens. Slice the bread and rub with garlic clove, grill until marked. Skin Chicken and Slice Serve over the bread and cover with Peperonatta. Can be serve with crumbly blue cheese or feta cheese.
