Southwestern Ham Wraps

Start to Finish: 30 minutes Makes: about 50 pieces
1 (8-ounce) package cream cheese, softened
1 cup mayonnaise or salad dressing
1/2 of a (1 1/4-ounce) package taco seasoning mix (about 2 tablespoons)
1 (15-ounce) can black beans, rinsed, drained
1 cup loose-pack frozen corn kernels, thawed
1/2 cup chopped red pepper
1/4 cup chopped fresh cilantro
1/2 cup finely chopped red onion
10 (1O-inch) flour tortillas
2 1/2 cups shredded taco- or nacho-flavored cheese
1 pound Hillshire Farm'" Ham, thinly sliced
1. Combine cream cheese, mayonnaise and taco seasoning mix in a medium bowl;
beat with an electric mixer on low to medium speed until well blended and almost
smooth. Stir in the beans, corn, red pepper, cilantro and red onion until well
mixed.
2. Spread approximately 1/3 cup of the vegetable mixture evenly onto each
tortilla. Sprinkle cheese over. Lay slices of ham over cheese and roll up each
tortilla. Trim off ends and discard. Slice tortilla wraps into 1 1/2-inch
pieces. (Or wrap rolled tortillas in plastic wrap. Store in the refrigerator for
up to 24 hours. Trim ends and slice into pieces before serving.)
