Recipe by: Shirl and Schumacher's Hotel Ingredients: 1/4 C. butter 1/2 C. packed light brown sugar 1 large orange 1 large lemon 1/3 C. honey 3 T. Grand Marnier, or other orange liqueur 2 T. brandy 6 fresh peaches, peeled and sliced (about 5 C.) 1 qt. vanilla ice cream Method: Melt butter in large skillet. Add brown sugar; cook over medium high heat, stirring constantly for 1 - 2 minutes, until bubbly. Grate rind of orange and lemon and juice both. Add rinds, juices and honey; cook, stirring occasionally, over medium heat 2 minutes. Remove from heat and add liqueur, brandy and peaches. Return to medium high heat; cook 3 minutes or until syrup thickens slightly and coats peaches. Spoon over ice cream and serve immediately. Serves 6. I usually make this ahead and then zap it in the microwave when I'm ready to serve dessert. |
