Ingredients: 3 tablespoons olive oil 2 cups chopped onions 1-1/2 tablespoons chopped garlic 2-1/2 cups canned whole plum tomatoes 1-1/4 cups canned tomato sauce 1-1/4 cups canned crushed tomatoes 1/2 cup canned tomato paste 2 cups water 2 tablespoons dried basil, or 1/3 cup chopped fresh basil 1/2 tablespoon dried oregano, or 1-1/2 tablespoons chopped fresh oregano 1 teaspoon salt 1/4 teaspoon whole black peppercorns 1-1/2 cups quartered canned artichoke hearts Method: In a large pot, heat the oil and sauté the onions and garlic for 3 - 5 minutes, or until the onions are translucent. Stir in all of the tomato products, the water, herbs, salt, and peppercorns and cook on medium-high heat for 20 minutes. Add the artichoke hearts and cook for at least 20 minutes more, stirring occasionally. Serve with your favorite pasta. |
