Recipe by: Melissa Ingredients: 2 Tbsp. vegetable oil 2 med. onions, peeled and finely chopped 1/2 c. finely chopped fresh parsley 2 tsp. minced garlic 1 c. packed brown sugar 2 c. water 2 8-oz. cans tomato sauce 3 Tbsp. tomato past 3 Tbsp. fresh lemon juice 1/4 c. fresh orange juice 2 tsp. red wine vinegar 2 Tbsp. paprika 2 tsp. salt 1/2 tsp. freshly ground black pepper 1/4 tsp. cayenne Method: In heavy saucepan, heat oil over medium heat. Add onions, parsley and garlic and cook until onions are golden, about 15 minutes. Dissolve brown sugar in water and add to onion mixture. Add tomato sauce and tomato paste. Stir until well blended and simmer, uncovered, until thickened, about 30 minutes. Add lemon juice, orange juice, vinegar, paprika, salt, pepper and cayenne. Simmer until thickened to the consistency of jam, about 30 minutes. Make 3 cups. This slightly sweet sauce is great on baked or grilled chicken. |
