Apple Cinnamon Scones
Ingredients:
1/2 cup flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/3 cup butter
1 cup quick cooking oats
1 small apple, peeled, cored, chopped
2 egg whites
2 tablespoons apple juice or skim milk
2 tablespoons honey
Directions:
In mixing bowl stir together flours, baking powder and cinnamon.Cut in butter
till mixture resembles coarse crumbs. Stir in oats and apple. Add egg whites,
apple juice and honey. Mix well.Dough will be sticky. Spray a baking sheet with
nonstick coating. With floured hands, pat dough into a 7" circle on baking
sheet. Cut into 12 wedges using a long thin-blade spatula. Brush tops with a
little milk. Bake at 400ºF for 10-12 minutes until golden. Serve warm.
