Buttermilk Strawberry Scones
Ingredients:
2 c Flour
1/4 c Sugar
1 1/2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
1/4 c Margarine
1/2 c Nonfat buttermilk
1/4 c Egg substitute OR 1 lg Egg
3/4 c Strawberry preserves
1/4 c Chopped pecans
Direction:
Sift together dry ingredients in a bowl. Cut in margarine with a pastry cutter
until mixture resembles coarse meal. Add buttermilk and egg substitute or egg,
mix until ingredients are moistened. Turn dough out onto a lightly floured
surface. Knead 4 to 5 times with floured hands. Pat dough into a 1/2 inch thick
circle. Cut 2 inch circles from dough with a biscuitcutter or water glass. Place
circles on a baking sheet that has been sprayed with nonstick cooking spray.
Place 1 tablespoonof strawberry preserves on top of each and sprinkle with
pecans. Bake at 400°F for 12 minutes or until brown. Makes 1 dozen.
