Irish Butterscotch Drop Scones

Toni Cascio of Owings Mills, Maryland, writes: "Cooking & traveling are two of
my greatest pleasures. I went to Ireland several years ago & had such marvelous
scones that I just had to re-create them at home."
This is a great scone recipe, & it works even without the butterscotch chips.
One cup of dried berries, chocolate chips, shredded coconut, or dried cherries
can be substituted, if you like.
2 cups all purpose flour
1/3 cup (packed) golden brown sugar
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, diced
1 cup butterscotch chips (about 6 ounces)
1/2 cup (or more) chilled whipping cream
1 large egg
1. Set oven to 400°F
2. In a bowl sift flour, brown sugar, baking powder & salt in a medium bowl.
3. Add in very cold butter pieces & rub between fingers until coarse meal forms.
4. In a small cup or bowl whisk together the cream & egg.
5. Add to the butter/flour mixture with the baking chips & toss with a fork just
until the dough comes
together in moist clumps (add in more whipping cream if dough seems dry).
6. Drop dough by 1/4 cupfuls onto a large lightly greased baking sheet, spacing
apart.
7. Bake for about 20 mins, or until the scones are golden brown.
8. Best served warm.
