Lemon Blueberry Scones

Ingredients:
1 egg, beaten
1/3 cup sugar
1/4 tsp salt
1- 8oz carton lemon yogurt
1/4 cup margarine, melted
1 tsp grated lemon peel
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 cup blueberries
Glaze:
1/2 cup powdered sugar
1 Tbsp lemon juice
1/2 tsp grated lemon peel
Scones: combine egg, sugar, salt, yogurt, margarine and lemon peel; mix well.
Add flour, baking powder and soda; mix until just moistened. Fold in
blueberries. Drop by Tbspfuls onto greased baking sheet. Bake at 400 degrees for
15-18 minutes or until lightly browned.
Glaze: Combine powdered sugar, lemon juice and peel. Drizzle over warm scones.
Makes 1 dozen.
