Orange Scones

2 2/3 cups FLOUR (un-sifted)
1 teaspoon BAKING SODA
1 teaspoon BAKING POWDER
1/2 teaspoon SALT
2 tablespoons SUGAR
1/2 cup BUTTER
1 tablespoon ORANGE RIND (grated)
1/2 cup CURRANTS
3 tablespoons VINEGAR
3/4 cup ORANGE JUICE
1 EGG (beaten)
MILK
SUGAR
BUTTER
Mix flour with baking soda, baking powder, salt and sugar. Cut in butter with
two knives or pastry blender until mixture resembles coarse corn meal. Stir in
orange rind and currants. Combine vinegar and orange juice. Make a well in
center of flour mixture. Add liquid and egg all at once. Stir in mixture with a
fork until all dry ingredients are moistened. Turn onto a floured board. Knead
gently 8 to 10 times, adding a little more flour if necessary. Roll into
12x6-inch rectangle. Cut into eight 3-inch squares. Cut each square in half
diagonally, to make two triangles. Brush tops with milk and sprinkle with sugar.
Place on greased baking sheets. Bake in 425 F oven for about 15 minutes (until
golden brown). Serve with hot butter.
