3 cups self-rising flour
1/2 cup sugar
1/2 cup cold butter -- cut into 1" cubes
1 1/2 cups dried mixed fruit -- chopped
6 ounces milk
Preheat the oven to 350 F. In a bowl, sift the flour and sugar, add the butter,
then blend the mixture until it resembles coarse meal. Stir in the mixed fruit.
Add the milk, a little at a time, and blend the mixture until it forms a soft
but not sticky dough.
On a lightly floured surface, roll the dough into a round about 1 1/4" thick.
With a 2" round cookie cutter, stamp out rounds. Transfer rounds to a buttered
baking sheet, brush the tops with additional milk and bake for 20-25 minutes or
until lightly golden and bottoms sound hollow when tapped.
This makes about 11 scones.
