Meridian Cafe balsamic mushroom soup

Ingredients
2 tablespoons olive oil
1 cup diced onion
˝ cup diced celery
˝ cup diced carrot
3 cloves diced garlic
1˝ pounds chopped oyster and shitake mushrooms, coarsely chopped
1/3 cup balsamic vinegar
2 quarts vegetable broth
Salt and pepper to taste
Instructions
In a soup pot, heat the olive oil until shimmery. Add the onion, celery, carrot,
garlic and chopped mushrooms. Sauté all vegetables until softened, 10 to 15
minutes. Add the balsamic vinegar. Stir well to loosen any browned bits on
bottom of pot. Add broth, and simmer for 30 minutes. Taste, and add salt and
pepper to adjust flavor.
Serves 6.
