Heidi's Dinner Chowder
A Meal in Itself and It's Soooo Good!

Ingredients:
2 cups diced, pared, raw white potatoes
1/3 cup minced onions
1/2 cup diced celery
1 tsp. salt
3 TB. butter
1/4 cup flour
1/4 tsp. pepper
1/2 tsp. dry mustard
2 cups milk or cream
1 TB minced parsley
1 1/2 cups canned tomatoes
1 1/2 cups grated cheese (I like cheddar) Optional: carrots, diced
Directions:
Combine first five ingredients. Cover and simmer until tender (approximately 15
minutes). Meanwhile melt butter in a double boiler. Stir in flour, then next
five ingredients. Cook until thick. Stir in cheese and let melt. Stir into soup
with parsley and tomatoes. Serve.
