San Francisco French Onion Soup
Ingredients:
3 tablespoons butter
1 tablespoon olive oil
2 large onion, peeled and thinly sliced
1 teaspoon salt
3 cups hot chicken broth
1/2 cup dry white wine
4 slices toasted sourdough French bread
4 tablespoons grated Parmesan cheese
Directions:
In heavy skillet, sauté the onions in butter and oil until translucent. Add
salt, broth, and wine. Cook over medium heat for 10 minutes.
Ladle into four ovenproof bowls. Top each bowl with a slice of toast, and then
sprinkle soup with a tablespoon of grated cheese.
Place under the broiler for 5 to 10 minutes or until cheese melts and bubbles.
