Hoot 'n' Holler Whiskey Cake

Ingredients:
½ cup butter
1 cup sugar
3 beaten eggs
1 cup flour
½ teaspoon baking powder
¼ teaspoon salt
½ teaspoon nutmeg
¼ cup milk
¼ cup molasses
¼ teaspoon baking soda
1 pound seedless golden r-r-r-r-raisins
2 cup chopped pecans
¼ cup Jim Beam or Jack Daniels whiskey (even a Japanese whiskey will work)
Directions:
First, take the whiskey out of the cupboard and have a small sip for medicinal
purposes. Cream the butter with the sugar and the beaten eggs. Mix together the
flour, baking powder, salt and nutmeg; add to the butter mixture. Add the milk.
Put the baking soda into the molasses, mix it up, and add it to the butter and
milk mixture. Add the raisins, nuts and whiskey. Pour into a greased and floured
loaf pan and bake at 350 degrees for 2 hours. Keep leftover cake wrapped in foil
in the refrigerator. |
