Irish Cream Coffee Ice Cream

I LOVE coffee! This recipe is nice because you can substitute your own favorite
coffee blend for the Irish Cream coffee. Try making Hazelnut, French Vanilla, or
maybe Chocolate Raspberry!
Ingredients:
6 egg yolks
1/2 cup sugar
2 cups cream
1 1/2 cups whole bean Irish Cream coffee
Directions:
In a medium sized bowl, beat the egg yolks. Gradually add sugar and continue
beating until mixture is a pale light color. Set aside. In a sauce pan, combine
cream and coffee beans. Heat until scalding (DO NOT boil). Slowly pour into egg
yolk mixture and stir thoroughly.
Pour the mixture back into the sauce pan and stir over low heat. Heat mixture
until it approaches the consistency of a custard and coats the back of the
spoon. Remove from heat and allow to cool (leaving beans in to increase flavor).
When cool, pour mixture through a strainer to remove beans. Transfer custard to
your ice cream maker and process according to manufacturer's instructions.
