Sweet and Sour Beef Brisket

This is usually made a day ahead, then sliced cold. Reheat before serving.
Ingredients:
1 beef brisket, about 6-8 pounds
garlic powder
salt and freshly ground black pepper
3 medium onions, peeled and sliced
1 12-ounce jar apricot preserves
1 14-ounce bottle catsup
Instructions:
Heat oven to 350 degrees. Season brisket to taste with garlic powder, salt and
pepper. Put brisket on enough aluminum foil to wrap like package. Put in
roasting pan and top with onions. Mix preserves and catsup together. Pour over
brisket. Wrap brisket securely and bake in preheated oven about 4 hours or until
tender.
