Mexican Potato Skins Recipe

Mexican Potato Skins          

6 potatoes
1/2 lb. ground beef
4 oz. taco sauce
4 oz. cheddar cheese
4 oz. sour cream

Bake the potatoes. When cooled, quarter and scoop out the potato. Place the skins, skin side down in a non-stick pan. Fry the beef then mix in the taco sauce. Scoop the beef in to each skin. Sprinkle with the cheese. Bake in a 350 degree oven for 15 minutes. Top with sour cream.
