Easy Turkey Pot Pie With Stuffing Top

1 (6 oz) pkg. chicken flavor stuffing mix
1/4 cup butter or margarine cut into pieces
1 1/2 cup hot water
1 (10 3/4 oz) can condensed cream of chicken soup
1 cup milk
3 cups cut up cooked turkey or chicken (about 16 oz)
1 (10 oz) package of frozen mixed vegetables
1/4 tsp thyme leaves
Heat oven to 350º. Place contents of vegetable/seasoning packet (from the
stuffing mix) and butter in a bowl. Add hot water: stir to partially melt
butter. Add stuffing crumb and stir gently to mix. Mix soup and milk in a 2 qt
casserole dish. Stir in chicken, vegetables, and thyme. Spoon stuffing over
chicken mixture. Bake for 45 minutes or until hot and bubbly.
Cut up turkey and freeze in packages of 3 cups each. You can freeze cooked
turkey for up to 1 month, but be sure to wrap it tightly.
