Italian Stuffing with Sausage and
Parmesan Cheese
Ingredients:
2 tbsp. olive oil
1 medium. onion, chopped
2 medium. celery ribs, with leaves, chopped
2 medium. rib bell peppers, seeded and chopped
2 cloves garlic, minced
1 lb. sweet Italian turkey sausage
1-1/2 cups turkey stock
1 tsp. dried basil
1 tsp. dried oregano
Crushed red pepper, to taste
7 cups Italian bread, day-old, cubed
1 cup parmesan cheese, freshly grated
1/2 cup Martini and Rossi Dry Vermouth
Directions:
Heat olive oil in large skillet; add onions, celery, red bell peppers, garlic
and sausage. Cook until sausage has browned and is thoroughly done. Pour sausage
mixture into bowl and add basil, oregano and crushed red pepper. Mix thoroughly.
Then bread crumbs, parmesan cheese, Martini and Rossi Dry Vermouth and turkey
stock. Pour mixture into casserole dish and bake for 35-40 minutes 350°F.
