Orange Stuffing

8 cups fresh bread cubes
1/2 cup chopped onion
1/2 cup chopped celery
2 tablespoons butter
2 tablespoons coarsely shredded orange peel
1 cup chopped fresh parsley
1/2 teaspoon dried thyme
1/2 teaspoon ground sage
2 teaspoons salt
Black pepper
1 cup fresh orange juice

Spread the bread cubes in a large pan. Let them dry at room temperature for 1 hour or more. Saute the onion and celery in the butter until the vegetables are tender. In a large bowl, combine the bread cubes, sautéed vegetables, orange peel, parsley, thyme, sage, salt, and pepper. Sprinkle the orange juice over the bread mixture and toss until the bread cubes are lightly moistened. Stuff turkey and roast according to direction.
