Roast Goose With Wild Rice Stuffing  roast goose with wild rice stuffing recipe

14 lb Goose
2 Cups Water
1/2 Cup Wild rice
1 Cup White rice
1/2 Cup diced onion
1 Can Mandarin oranges ( 8oz )
1/2 Cup Pine nuts
1 Cup Chestnuts,
1/2 Cup diced celery
1/2 Cube of butter

Cook rice until done, saute the celery and onion in butter. Mix all ingredients together.

Clean the excess fat out of the goose and rinse out the cavity well. There is quite a bit of fat inside a goose so try to get as much of it out as you can. Dry the inside of the cavity out with a paper towel to get the extra moisture out from rinsing.

Stuff the goose, salt and pepper the skin and prick with a fork all over the outer skin to let the oils escape. Tent the goose with foil and roast at 375 for about 4 hours. Remove the tent and roast for 30 minutes more. You need about 25 minutes per pound cooking time.
