Makes 16 bundles
2 cups spinach, chopped
1/2 cup fresh basil, chopped
2 cups ricotta cheese
1 cup feta cheese
1 teaspoon white pepper
1/2 teaspoon salt
1/2 cup sun-dried tomatoes
1 package phyllo dough
1/2 cup mint, chopped
Cut three stacked sheets of phyllo dough at a time into 4" by 4" squares.
Combine all of the remaining ingredients. Using a tablespoon, put a generous
amount of the mixture in the center of the filo squares. Gather the four corners
of the phyllo dough together to form a beggars purse.
Bake at 325 degrees F. until golden brown.
