Beet Relish
Ingredients:
2 cups coarsely shredded cooked beets
2 tbs. chopped red onion
2 tbs. cider or red wine vinegar
1 tsp. sugar
2 tbs. Dijon mustard
3 tbs. vegetable oil
Salt and pepper to taste
Directions
Combine all ingredients in small bowl and blend well. Chill thoroughly.
About 2 cups.
