Spinach with Garlic, Lemon and Olive Oil Recipe


Spinach with Garlic, Lemon and Olive Oil

 

Ingredients:
1 large package fresh spinach, cleaned
1/3 C water
2 cloves garlic, crushed
1/4 C olive oil
2 T lemon juice
salt and pepper to taste
 

Directions
Peel garlic cloves and flatten with the broad side of a knife to crush. Place crushed garlic in olive oil; set aside (for a stronger garlic flavor, do this as much as a day in advance and refrigerate oil). Heat water in large pot over high heat. Add spinach; cook until just wilted. Drain spinach; transfer to bowl. Remove garlic from oil; drizzle lemon juice, then the oil over spinach. Season with salt and pepper to taste; toss to coat
