Stuffed Maui Onions
From the 14th Annual Maui Onion Festival Recipe Contest

Ingredients
2 large Maui onions (remove first thick layer of skin)
13 large tiger prawns (sauté,ed in butter and a pinch of red pepper flakes)
1/2 chicken breast (cooked and shredded)
1/4 cup crabmeat (cooked)
Six 4-ounce packages shredded jalapeno jack cheese
12 green olives (Spanish stuffed)
2 large avocados (sliced in eighths)
2 cups red enchilada sauce
Tortilla chips with lime flavor (crumbled)
1/4 cup macadamia nuts (chopped coarsely) -- set aside about 2 teaspoons for
garnish
Directions
Preheat oven to 375 degrees.
Butter an 8"x8" baking dish.
Cut off tops of onions and root button only. Scoop out centers of onions with a
melon baller to about 1/4" thick. Slice onions halfway with three slices to
create flower-type look. Set aside.
Chop 3 large prawns and mix with chicken, crabmeat, cheese, olives, tortilla
chips and nuts in a medium bowl. Stuff onions generously. Place onions on baking
dish and bake until brown and cheese is bubbly, about 35-40 minutes. Meanwhile,
heat enchilada sauce and place sliced avocados on plates in a circular fashion.
Pour some sauce in center of plates. When onions are removed from oven,
carefully place on enchilada sauce. Drizzle some sauce over onions and sprinkle
nuts over onions. Decorate plates with remaining prawns between avocado slices.
