Ingredients: 1 1/3 cups chopped celery with leaves 1/4 cup minced green onions 2 tablespoon minced parsley 1/4 cup butter or margarine 3 cups water 1 tablespoon grated orange peel 2 cups orange juice 2 teaspoon salt 2 cups rice Method: In a heavy saucepan sauté celery, green onions and parsley in butter. Add water, orange peel and juice and salt. Bring to boil and slowly stir in rice. Cover, reduce heat and cook 25 minutes or until rice is tender. Fluff with fork. Makes 10 to 12 servings. |
