Italian Roasted Garlic Potatoes

4 medium Red Potatoes
4 Ripe italian plum tomatoes
6 Tbsp. Olive Oil
2 Garlic Cloves, minced
1 tablespoon italian blend seasoning
salt and pepper to taste

Preheat oven to 400 degrees F. Cut potatoes into wedges. Toss wedges with oil, garlic and italian seasoning.Add tomatoes and Bake in shallow baking dish until dark golden brown and fork-tender, about 20-25 minutes. 4 servings.
