Ingredients: 2 Tbsp. olive or salad oil 2 garlic cloves, minced 1/4 tsp. cayenne 2 medium ripe tomatoes,chopped 2 limes, cut in wedges salt and pepper 1 medium onion, thinly sliced 1/2 tsp. ground turmeric 3/4 lb. napa cabbage, thinly shredded (1 small head) 1 c. unflavored yogurt Method: Add oil, onion, garlic, turmeric and cayenne. Place in frying pan over medium heat. Cook onion until limp, stirring often. Add cabbage and tomatoes; stir often on high heat until most of the liquid has evaporated and cabbage is wilted, about 15 minutes. Pour the cabbage and tomatoes onto a warm platter. Surround with the lime wedges. Spoon unflavored yogurt into a small bowl. To each portion of the hot vegetables add lime juice, unflavored yogurt and salt and pepper to taste. |
