Ingredients: 2 cans Petit Pois (very young sweet peas) 1/4 cup cooking oil 1/2 cup flour 1 medium onion 1 lb smoked sausage 3 medium potatoes, cubed 2 tsp sugar Method: Cook oil and flour until dark brown, stirring constantly. Add onions and cook until clear. Add petit pois in their own water. Add sausage, potatoes and 1 can water. Bring to a boil for 10 minutes. Add sugar. Cook for 20 minutes or till gravy is thickened. Serve over cooked white rice. Serves 8. |
