Contributed by Queen Bear Ingredients: 2 small tender yellow squash, thinly sliced 2 small tender zucchini, thinly sliced 1 small onion, thinly sliced and separated 1-2 tsp. Italian seasoning 1 (14 1/2 oz.) can stewed or diced tomatoes Finely shredded mozzarella cheese Method: In skillet that has been sprayed with heavy coat of non-stick spray (or you can use a bit of olive oil), sauté squash, zucchini and onion with Italian seasoning until squashes are tender and onion is transparent. Add tomatoes and simmer, uncovered for 15-20 minutes, stirring frequently, until heated through. Serve topped with mozzarella cheese. *If you used Italian style tomatoes, you may want to cut down the amount or cut out the Italian seasoning. |
