Salmon Stuffed Baked Potato

2 Very Large Baking Potatoes
4 oz Smoked Salmon
1/2 Cup sour Cream
4 TSP Fresh chopped Dill
1 TSP Minced Garlic
Fresh ground pepper to taste
Salt to taste but be careful as the salmon is very salty

Bake potatoes at 500 degrees for one hour or until done when squeezed. Remove the potatoes from oven and slice in half length wise. Remove the pulp leaving a half inch or so in the skin. Mix the sour cream , dill , garlic, salt and pepper with the pulp using an electric mixer until fluffy. Next add the salmon and return the pulp to the potato shells. Be sure to mix the pulp mixture while the potatoes are still rather hot. If you allow them to cool the potato pulp will become like glue and will taste terrible. Return the potato halves to the oven and bake at 350 until hot and brown on top. Serve with an extra dollop of sour cream and chopped dill for garnish.
