Sunshine Carrots

5 Medium Carrots
1 TLB sugar
1 Tsp. Cornstarch
1/4 Tsp. Ground Ginger
1/4 Tsp. Salt
1/4 Cup Orange Juice
2 TLB Butter

Cut carrots on the bias in one inch chunks. Cook covered in boiling salted water till just tender, about 20 minutes and drain. In sauce pan mix sugar, corn starch, salt and orange juice. Cook and stir till thick and bubbly. Boil one minute, stir in butter and toss with carrots ( Serves 4 )
