Ingredients: 2 lbs. fresh green beans 2 Shallots, minced 2 T Dijon mustard 2 T balsamic vinegar 1/2 Cup olive oil salt & pepper to taste 1/4 Cup chopped fresh dill Method: Heat a large pot of water till boiling. Wash beans thoroughly, snip off the ends, remove any strings. Add the green beans and gook until crisp but tender, 2 -4 minutes. Drain well. While beans are cooking, place shallots, mustard, vinegar, oil, salt and pepper in a small saucepan. Heat, whisking constantly, until mixture is hot to the touch. Toss green beans with the dressing to coat. Quickly add dill and toss again. Serve at once. Serves 6 - 8 |
