Easy Apple Dumplings
Sauce:
2 cups sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 cups water
1/2 stick butter
Crust:
2 cups flour
2 tsp. baking powder
1/2 cup milk
1 tsp. salt
3/4 cup shortening
Pare and core 6-8 apples.
You can make the dumplings two ways:
Leave them whole (add some brown sugar and cinnamon to the middle), or
cut up as for apple pie (mix sliced apples with 1/2 cup brown sugar and 1/4 tsp. cinnamon).
Make sauce:
Mix sugar, cinnamon, nutmeg and water. Bring to a slow boil. Cook five minutes stirring occasionally.
Remove from heat and add butter. Set aside while you make the crust.
Crust:
Mix dry ingredients. Cut in shortening with a pastry knife.
Add milk all at once and stir just until moistened. Gather crust into ball with hand.
Roll out 1/4" thick on floured board or pastry cloth. Cut into squares and place apples on each square.
Gather corners of dough toward top and pinch closed. Place right side up in greased 9" X 13" pan.
Pour sauce over top.
Bake at 375° for 35 minutes.
You can spoon some of the sauce over the top of dumplings during last five minutes of baking.
Dumplings will puff out slightly.
You can freeze the dumplings for a future date-freeze individual dumplings on a cookie sheet and store in baggies.
When ready to eat, make sauce and bake at 375° for 40-45 minutes.
