Biscotti
3/4 cup butter
1 cup sugar
4 eggs
3 cups flour
1 tbsp. baking powder
1/2 tsp. salt
1 tsp. anise seeds
1 cup almonds
milk
granulated sugar

Cream butter and sugar until light.
Add eggs, one at a time. Continue beating until very light and fluffy.
Mix flour, baking powder, salt and anise seed together, then mix into creamed mixture.
Stir in nuts. Divide dough into fourths. Grease two cookie sheets.
Form the dough into two loaves, 1 1/2" wide and the length of each baking sheet.
Bake at 350 25-30 minutes. Remove from oven.
Cut loaf diagonally into 3/4" slices.
Place cut side down on cookie sheet, brush with milk and sprinkle with granulated sugar.
Return to oven, bake at 375, 10 minutes longer until toasted and crisp.

Variation:

Omit anise seeds, milk and granulated sugar. Add 1 tsp.
vanilla and toast almonds to a golden brown before adding to dough.
Follow above directions for baking loaves.
After loaves are cut diagonally, return to oven 10 minutes longer to a golden brown.

Variation:

Omit anise seeds and chopped almonds.
Add 1 1/2 tsp. vanilla, 1 tsp. of lemon rind and 1 tsp. orange rind (grated).
When baked, slice each roll diagonally and return to oven 5-10 minutes to brown.
