Carrot Cake
This cake won first place at the Ohio state fair some years back.

3 cups flour
2 cups sugar
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
3 cups grated carrots, ground fine in a food processor (must be fresh)
This will be one bag of the little ones. No need to measure them.
4 eggs
1 1/2 cups Wesson oil
1/2 cup pecans (grind with part of the carrots)
2 tsp. vanilla
1/2 cup applesauce

Preheat oven to 325. Grease and flour three 9" cake pans.
Mix first 6 ingredients.
Next add carrots, blend in eggs, then add oil, vanilla, and then stir in nuts.
Bake for 25 minutes or until toothpick comes out clean.
DO NOT OVERBAKE. Set out in pans until it is cold.


1 lb. confectioner's sugar
1 stick butter
8 oz. cream cheese, softened
pinch of salt
1 tsp. vanilla

Frost cake when cool.

ADDENDA: A 9" round pan has 63.6247 square inches.
An 8" square has 64 square inches.
Not a lot of difference but the 9" round makes a much better cake.
I wanted to use a square one so it would cut better, but it is not good, so don't waste your time on doing it. A little more about round and square pans.
An 8" round has 25.1328 square inches.
So you can see they don't come out close with the 8".
Also a 9" square pan has 92 square inches.
Not too earth shattering, but it might help sometime.
