Jumbalaya
1 package smoked sausage
3 tbsp. butter
1 large onion, chopped
3 stalks celery, chopped
1 large bell pepper, chopped
1 tsp. of each: white pepper, black pepper, cayenne pepper
2 crushed garlic cloves
1 cup uncooked rice
14 oz. can tomatoes, diced
3 cups chicken broth
salt to taste
Melt butter. Add onions and brown. Add green peppers, celery, garlic briefly.
Add all peppers, rice, tomatoes and rest of ingredients.
Bring to a boil.
Simmer 20-25 minutes.
