Apple Cake (Jungle Jim's)
4 cups apples, peeled and sliced
2 cups sugar (I used 1 3/4 cup)
2 cups all-purpose flour
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
3/4 cup vegetable oil
2 tsp. vanilla extract
1 cup pecans or walnuts, chopped
Preheat oven to 350°.
Stir together the apples and sugar.
Combine dry ingredients together.
Add dry ingredients to apple mixture and mix well.
In separate bowl, beat eggs, oil and vanilla.
Stir into apple mixture until thoroughly moistened.
Stir chopped nuts.
Pour into 13" X 9" X 2" greased and floured pan.
Bake 55 minutes and test with a toothpick or a cake tester.
If tester comes out wet, then bake for 10 more minutes. (Mine took that long to bake.)
