Lemon Cake
Cake:

2/3 cup oil
2/3 cup water
4 eggs
1 lemon cake mix
2 tsp. lemon rind
1 small instant lemon pudding

Mix ingredients. Pour into a 9" X 13" pan and bake at 350° for 35 minutes.
Have icing ready when cake comes out of oven.
Punch holes in hot cake with fork and pour icing over cake.

Icing:

2 cups powdered sugar
2 tsp. butter
1/3 cup lemon juice
1/3 cup water

Melt butter. Add remaining ingredients. Stir well.
(A little lemon rind can also be added to the icing for more flavor.)
