Baked Mostaccioli With Sausage And Peppers
This was a dish that was made on occasion, and I thought I had been given the recipe.
Unfortunately, after much searching I was unable to find it.
From the way it had been described, however, this recipe is quite similar to it.
1 lb. sweet or hot sausage (casings removed)
1 green pepper, thinly sliced
1 medium onion, sliced (separate into rings)
4 cups marinara sauce
1 cup water
1 lb. mostaccioli (cook 8 minutes, drain)
1 lb. mozzarella, shredded
1/2 cup Parmesan cheese
In large skillet, brown sausage, pepper and onion over medium-high heat for 6 to 8 minutes, stirring frequently.
Add marinara sauce and water. Bring to boil.
Reduce heat and simmer 10 minutes.
Spread 1 cup sauce in bottom of 13" X 9" X 2" baking dish.
Top with half the mostaccioli, half of the mozzarella and Parmesan cheese.
Spread 2 cups of sauce, then layer remaining pasta, sauce and mozzarella.
Bake in a 350° oven for 30 minutes, or until heated.
