Quick Caramel Icing Or Frosting
(If You Like That Name Better)
1/2 cup margarine
1 cup light brown sugar
1/4 cup milk
about 1 3/4 cups confectioner's sugar
Melt butter in saucepan. Add brown sugar and cook over low heat for 2 minutes, stirring constantly.
Stir in milk and continue cooking, stirring constantly until mixture comes to a rolling boil.
Remove from heat and let cool. Add confectioner's sugar a little at a time with an electric mixer on high speed.
Continue adding sugar until frosting has a smooth spreading consistency.
Makes about 1 2/3 cups, enough for an 8" or 9" cake.
