Fresh Tomato Sauce For Spaghetti
4 lbs. fresh tomatoes, peeled and chopped
2 medium onions, chopped
4 garlic cloves, chopped
1/4 cup fresh basil, chopped
1/4 cup olive oil
1 tsp. salt
4 sprigs fresh parsley
1 tbsp. sugar
fresh Parmesan cheese, grated
Heat olive oil over medium heat in a large, non-reactive skillet or large saucepan.
Add onion, basil, garlic and salt. Sauté until onion is tender, approximately five minutes.
Add tomato, parsley, and sugar. Heat to a boil.
Reduce heat and simmer, uncovered about two hours, stirring often, or until sauce has thickened.
Remove parsley. Serve over cooked spaghetti or other Italian pasta.
Top with fresh grated Parmesan cheese.
